It is a powder made from grinding wheat used for human consumption. Wheat flour is produced more than any other flour because it is the staple food for the majority of the world’s population. If the gluten content in wheat is low, it becomes “soft” or “brittle”, and if the gluten content is high, it becomes “hard”. Hard flour, or bread flour, contains high gluten, equivalent to 12% to 14%
